pesto sauce

Instructions
Start by preheating a skillet or pan over medium heat.
Spread a generous layer of cream cheese on one side of each slice of sourdough bread.
On one slice, spread a layer of pesto on top of the cream cheese.
Layer roasted red peppers evenly over the pesto.
Add a handful of arugula and top it with sliced cucumbers.
Sprinkle crumbled feta cheese over the top, followed by a dash of salt and pepper to taste.
Place the other slice of bread (cream cheese side down) on top to form a sandwich.
Drizzle olive oil on the skillet and carefully place the sandwich in the pan.
Cook for about 3-4 minutes on each side, or until the bread is golden brown and crispy.
Once cooked, remove from the pan, cut the sandwich in half diagonally, and serve warm.
Notes
Serve the sandwich on a rustic wooden board, with a side of extra arugula and a small bowl of pesto for dipping.
