Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, cream the softened butter and 1/2 cup powdered sugar together until light and fluffy.
Stir in the vanilla extract and almond extract, if using.
Gradually sift in the all-purpose flour and salt, mixing until just combined.
Fold in the chopped nuts, ensuring they are evenly distributed throughout the dough.
Using your hands, form small balls (about 1 inch in diameter) and place them on the prepared baking sheet, leaving some space between each cookie.
Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden but the centers are still soft.
Allow the cookies to cool on the baking sheet for about 5 minutes before rolling them in powdered sugar while they are still warm.
Once completely cooled, dust with additional powdered sugar for a snow-like finish.
Notes
Arrange the cookies on a festive plate or platter and garnish with a sprinkle of powdered sugar and a few whole nuts for a decorative touch.
