In a large mixing bowl, combine the gnocchi, cherry tomatoes, zucchini, bell pepper, and broccoli.
In a small bowl, whisk together the olive oil, minced garlic, Italian seasoning, salt, and pepper.
Pour the olive oil mixture over the gnocchi and veggies, and toss everything until evenly coated.
Spread the mixture in a single layer on a large baking sheet.
Bake in the preheated oven for about 20 minutes, stirring halfway through to ensure even cooking.
After 20 minutes, remove the sheet pan from the oven, sprinkle the grated Parmesan cheese over the top, and return to the oven for an additional 5 minutes, or until the cheese is melted and slightly golden.
Once done, remove from the oven and let it cool for a couple of minutes.
Serve warm, garnished with freshly chopped parsley for a pop of color and flavor.
