Instructions
Preheat your oven to 350°F (175°C).
Spread a generous spoonful of peanut butter on half of the Ritz crackers, then top each with another cracker to form a sandwich.
Arrange the cracker sandwiches on a baking sheet lined with parchment paper.
In a microwave-safe bowl, melt the milk chocolate chips in 30-second intervals, stirring in between, until smooth.
Once melted, dip each cracker sandwich into the chocolate, making sure to coat it well. Let the excess chocolate drip off.
Place the chocolate-covered sandwiches back on the baking sheet.
Sprinkle a pinch of sea salt on top of each cookie and then a light dusting of powdered sugar for added sweetness.
Bake in the preheated oven for 6-8 minutes until the chocolate is slightly set.
Remove from the oven and let cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Feel free to use your favorite type of nuts for topping.
