Instructions
Preheat the oven to 375°F (190°C).
In a mixing bowl, combine the cauliflower rice, garlic powder, Italian seasoning, salt, and pepper. Mix until well blended.
Grease a large oven-safe bowl or baking dish with a little olive oil. Press the cauliflower mixture into the bottom and up the sides to form a 'bowl.'
Bake the cauliflower bowl for 15-20 minutes until it is slightly golden and firm.
While the cauliflower bowl is baking, in another bowl, mix the shredded chicken breast with half of the marinara sauce. Set aside.
Once the cauliflower bowl is done, remove it from the oven. Spread the remaining marinara sauce on the base of the bowl.
Layer the chicken mixture on top of the marinara sauce. Then add the diced bell peppers and halved cherry tomatoes evenly over the chicken.
Cover the top with shredded mozzarella cheese.
Return the bowl to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool slightly. Garnish with fresh basil leaves before serving.
