In a mixing bowl, combine the peanut butter, rolled oats, honey (or maple syrup), ground flaxseed, vanilla extract, and sea salt. Stir until all ingredients are well combined.
Fold in the dark chocolate chips to the mixture. Ensure they are evenly distributed.
Using your hands, take small portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter.
Place the cocoa powder in a shallow bowl. Roll each ball in the cocoa powder until fully coated.
Transfer the bliss balls to a plate or container lined with parchment paper.
Place the bliss balls in the refrigerator for at least 30 minutes to firm up before serving.
Notes
Serve them in a decorative bowl with a sprinkle of extra cocoa powder on top, or on a slate board with a few whole peanuts as garnish.
