Instructions
In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until it becomes translucent.
Stir in the minced garlic and cook for an additional minute until fragrant.
Add the diced carrots and celery to the pot, cooking for about 5-6 minutes until they soften slightly.
Season the mixture with thyme, oregano, red pepper flakes, salt, and pepper. Stir to combine.
Place the chicken breasts in the pot and pour in the chicken broth. Bring the mixture to a gentle boil.
Reduce the heat to a simmer, cover the pot, and cook for 15-20 minutes, or until the chicken is cooked through.
Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the soup.
Stir in the corn kernels and heavy cream, simmering for another 5 minutes until heated through. Adjust seasoning if necessary.
Once ready, ladle the soup into bowls and garnish with fresh parsley before serving.
Notes
Serve the soup in rustic bowls with crusty bread on the side for dipping, and add a sprinkle of additional parsley for a pop of color.
