Italian chicken sausage (or turkey sausage), casings removed

low-sodium chicken broth

kale, chopped (stems removed)

diced tomatoes, drained (15 oz)

dried oregano

Fresh parsley, chopped for garnish
Instructions
In a large pot, heat olive oil over medium heat. Add the chopped onion, and sauté until translucent, about 5 minutes.
Add the minced garlic, diced carrots, and celery to the pot. Cook for an additional 5-7 minutes until the vegetables start to soften.
Crumble the sausage into the pot and cook until browned, breaking it apart with a wooden spoon, about 8-10 minutes.
Stir in the oregano, paprika, salt, and pepper. Cook for another minute until the spices are fragrant.
Pour in the chicken broth and bring the mixture to a simmer.
Add the drained diced tomatoes and chopped kale, stirring to combine. Let the soup simmer for 15-20 minutes until the kale is tender.
Adjust the seasoning with additional salt and pepper as needed.
Serve hot, garnished with fresh parsley on top.
Notes
Feel free to substitute with turkey sausage for a lighter option.
