Instructions
In a large pot, heat the olive oil over medium heat.
Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
Stir in the diced potatoes, sliced carrots, and parsnips, cooking for an additional 5 minutes while stirring occasionally.
Pour in the vegetable broth and water, bringing the mixture to a gentle boil.
Add the green beans along with the dried thyme and rosemary. Season with salt and pepper to taste.
Reduce the heat to low, cover, and let the stew simmer for about 30-35 minutes, or until all the vegetables are tender.
Stir occasionally and adjust the seasoning if needed.
Once cooked, remove from heat and let it sit for 5 minutes before serving.
Notes
Serve in warm bowls, garnished with fresh parsley. Crusty bread pairs well.
