Instructions
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
Stir in the minced garlic and cook for an additional minute until fragrant.
Add the ground beef to the pot, breaking it up with a spoon. Cook until browned, about 5-7 minutes, and drain excess fat if necessary.
Incorporate the diced carrots, celery, and bell pepper into the pot. Sauté for another 5 minutes until the vegetables start to soften.
Add the diced zucchini, canned tomatoes (with their juice), beef broth, frozen corn, and green beans to the pot.
Season the soup with oregano, basil, salt, and black pepper. Stir well to combine all ingredients.
Bring the soup to a boil, then reduce the heat and let it simmer uncovered for 25-30 minutes, allowing the flavors to meld together.
Taste and adjust seasoning if necessary before serving.
Notes
Serve hot with fresh parsley and crusty bread.
