Instructions
In a large pot or Dutch oven, heat the olive oil over medium heat.
Add the chopped onion and minced garlic, and sauté for about 3-4 minutes until the onion is translucent.
Stir in the diced carrots and celery, cooking for another 5 minutes until slightly softened.
Add the chopped cabbage to the pot, mixing well with the other vegetables.
Pour in the diced tomatoes with their juice and the vegetable broth.
Season with dried thyme, paprika, bay leaf, salt, and pepper.
Bring the soup to a boil, then reduce the heat to low and let it simmer uncovered for about 30-35 minutes, or until the cabbage is tender.
Remove the bay leaf before serving. Taste and adjust seasoning if needed.
Serve hot, garnished with fresh chopped parsley.
Notes
Ladle the soup into bowls and add an extra sprinkle of fresh parsley on top. Serve with a slice of crusty bread for a delightful meal!
