Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, combine olive oil, minced garlic, red pepper flakes, lemon juice, lemon zest, salt, and pepper. Stir well to create a marinade.
Add the peeled and deveined shrimp to the bowl and mix until all shrimp are evenly coated in the marinade. Let it marinate for about 15 minutes.
Spread the marinated shrimp onto a baking sheet in a single layer.
Sprinkle grated Parmesan cheese evenly over the shrimp.
Roast in the preheated oven for 8-10 minutes, or until the shrimp are pink and opaque, and the cheese is golden brown.
Once cooked, remove from the oven and garnish with fresh parsley before serving.
Notes
Serve with crusty bread to soak up the juices.
