In a large mixing bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes, or until frothy.
Once frothy, add the olive oil, salt, and 2 cups of the flour. Mix until combined.
Gradually add the remaining flour, one cup at a time, mixing with a wooden spoon or dough hook until a smooth and elastic dough forms.
Knead the dough on a floured surface for about 5-7 minutes until stretchy and slightly tacky.
Place the kneaded dough in a greased bowl and cover it with a kitchen towel. Let it rise in a warm spot for about 1 hour or until doubled in size.
Preheat your oven to 375°F (190°C).
Once the dough has risen, punch it down gently and divide it into 12 equal portions. Shape each portion into a smooth ball.
In a small bowl, combine the minced garlic, Italian seasoning, and Parmesan cheese. Roll each dough ball in this mixture, ensuring they are well coated.
Arrange the dough balls in a greased baking dish, allowing a little space between them. Cover with the towel and let them rise for another 30 minutes.
Brush the tops of the rolls with melted butter and sprinkle any remaining garlic-parmesan mixture on top.
Bake in the preheated oven for 20-25 minutes or until golden brown.
Remove from the oven and garnish with fresh chopped parsley before serving.
