Begin by trimming the crusts off the bread slices to create a soft, uniform shape. Use a rolling pin to flatten each slice slightly for easier rolling.
In a small bowl, mix the softened cream cheese with the mashed banana (or desired fruit preserves) until smooth. This will be your filling.
Spread a generous tablespoon of the cream cheese mixture onto one side of each flattened bread slice.
Roll each slice up tightly, starting from the filled side, to create a roll. Pinch the ends to seal.
In a shallow dish, whisk together the eggs, milk, vanilla extract, cinnamon, and sugar, if using, until well combined.
Heat a skillet over medium heat and add one tablespoon of butter, swirling to coat the pan.
Dip each roll-up in the egg mixture, ensuring it's coated on all sides but not soaked. Allow excess to drip off.
Place the roll-ups seam-side down in the skillet and cook for about 2-3 minutes per side or until golden brown and crispy.
Remove from the skillet and place on a paper towel to absorb any excess butter.
Serve warm with maple syrup or drizzled honey for dipping.
