Instructions
In a pot, bring salted water to a boil and add the chopped carrots. Cook for about 15-20 minutes, or until the carrots are tender and easily pierced with a fork.
Drain the carrots and transfer them to a large mixing bowl.
Add olive oil, maple syrup, smoked paprika, ground cumin, salt, and black pepper to the carrots.
Using a fork or a potato masher, gently smash the carrots until just combined, keeping some texture for a rustic feel.
Taste and adjust seasoning if needed.
Serve warm, garnished with fresh chopped parsley on top.
