Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Cut the pressed tofu into bite-sized cubes (about 1 inch each).
In a large mixing bowl, combine cornstarch, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss the tofu cubes in the mixture until evenly coated.
Arrange the coated tofu on the prepared baking sheet in a single layer, making sure they are not touching.
Bake for 25-30 minutes, flipping the tofu halfway through, until golden brown and crispy.
While the tofu is baking, heat sesame oil in a pan over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not burned.
Once the tofu is done baking, remove it from the oven and pour the sautéed garlic mixture and soy sauce over the tofu. Gently toss to coat the tofu with the sauce.
Return the tofu to the oven for an additional 5 minutes to allow the flavors to meld.
Remove from the oven and transfer the tofu bites to a serving dish. Garnish with chopped green onions and optional sesame seeds.

For extra flavor, let the tofu marinate in the sauce for a few minutes before baking.
