Instructions
Preheat your oven to 375°F (190°C).
In a shallow dish, mix the flour with a pinch of salt and pepper.
In another shallow dish, beat the eggs until smooth.
In a third shallow dish, combine the breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
Dip each flattened chicken breast first into the flour, shaking off excess, then into the beaten eggs, and finally press into the breadcrumb mixture, ensuring an even coating.
In a large skillet, heat about 1/4 inch of olive oil over medium-high heat. Once hot, carefully add the breaded chicken breasts to the skillet. Fry for about 4-5 minutes per side, until golden brown and crispy.
Remove the chicken from the skillet and place it on a baking sheet lined with parchment paper.
Spoon a generous amount of marinara sauce over each chicken breast, then sprinkle shredded mozzarella cheese on top.
Bake in the preheated oven for about 15-20 minutes, or until the cheese is bubbly and lightly browned.
Remove from the oven and let rest for a few minutes. Garnish with fresh basil leaves before serving.
