In a large bowl, combine the cut sweet potatoes with olive oil, garlic powder, smoked paprika, salt, black pepper, and cayenne pepper (if using). Toss until the fries are evenly coated with the seasoning mixture.
Preheat your air fryer to 400°F (200°C) for about 5 minutes to ensure they cook evenly.
Place the seasoned sweet potato fries in a single layer in the air fryer basket. Depending on your air fryer size, you may need to do this in batches to avoid overcrowding.
Cook the fries in the air fryer for 15-20 minutes, shaking the basket halfway through cooking to ensure they crisp up evenly. Keep an eye on them towards the end to achieve your preferred level of crispiness.
Once they are cooked and golden brown, remove the fries from the air fryer and let them cool for a couple of minutes. This will help intense the crispiness.
