Instructions
In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess fat if necessary.
Add the diced onion and cook for 3-4 minutes until softened. Stir in minced garlic and cook for an additional minute until fragrant.
Add the diced carrots and celery to the pot, cooking for another 5 minutes until they soften slightly.
Stir in the black beans, corn, diced tomatoes with their juices, and beef broth. Mix well until all ingredients are combined.
Sprinkle in the chili powder, cumin, salt, and pepper. Bring the soup to a boil, then reduce heat and let it simmer for about 15-20 minutes.
Stir in the heavy cream and let the soup simmer for another 5 minutes until heated through and combined. Adjust seasoning if necessary.
Serve hot, garnished with fresh cilantro and a sprinkle of shredded cheddar cheese if desired.
