Instructions
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon until well mixed.
In another bowl, combine the melted butter, egg, vanilla extract, orange zest, and orange juice. Mix until smooth.
Pour the wet ingredients into the dry ingredients, and gently mix until just combined. Be careful not to overmix; it's okay if there are a few lumps.
Fold in the halved cranberries and chopped walnuts (if using) until evenly distributed.
Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
