green beans, trimmed and cut into 1-inch pieces

Instructions
In a large pot, heat the olive oil over medium-high heat.
Add the beef cubes and sear until browned on all sides, about 5-7 minutes. Remove and set aside.
In the same pot, add the diced onion and minced garlic, sautéing until soft and fragrant, about 2-3 minutes.
Stir in the sliced carrots, chopped celery, and diced red bell pepper. Cook for another 5 minutes, until the vegetables are slightly tender.
Return the seared beef to the pot, adding in the diced tomatoes, beef broth, and water.
Season the pot with dried oregano, thyme, salt, and pepper. Bring to a boil, then reduce the heat to low and simmer for 1 hour.
After an hour, add the green beans and continue to simmer for an additional 20-30 minutes, or until the beef is tender.
Taste and adjust seasoning if needed.
Serve hot, garnished with fresh parsley.
Notes
Feel free to add other vegetables or adjust seasoning to taste.
