Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat. Add the chopped spinach and cook until wilted, about 3-4 minutes.
In a mixing bowl, combine the softened cream cheese, chicken broth, garlic powder, onion powder, salt, and pepper. Mix until smooth.
Fold in the shredded chicken, cooked spinach, half of the mozzarella, and half of the Parmesan cheese into the cream cheese mixture.
Pour the chicken and spinach mixture into a greased casserole dish, spreading it evenly.
Top the casserole with the remaining mozzarella and Parmesan cheese. If you like a hint of spice, sprinkle red pepper flakes on top.
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
Let the casserole cool for a few minutes before serving.
Notes
