black beans, drained and rinsed (15 oz)

diced tomatoes with green chilies (15 oz)

chili powder

cumin

shredded cheddar cheese

Instructions
Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
Add the diced onion, garlic, and bell pepper to the skillet; sauté until the onions are translucent and the peppers are tender, about 5-7 minutes.
Stir in the corn, black beans, diced tomatoes (with their juices), chili powder, cumin, salt, and pepper. Mix well and allow to simmer for 5 minutes.
Add the cooked rice to the skillet, stirring until the mixture is evenly combined.
Transfer the mixture to the prepared baking dish and spread it out evenly.
Sprinkle shredded cheddar cheese over the top of the casserole.
Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro before serving.
