Instructions
In a blender, combine the fresh blueberries, lemon juice, water, honey (or maple syrup), and lemon zest. Blend until smooth.
Strain the mixture through a fine-mesh sieve into a bowl to remove the blueberry skins, if desired for a smoother texture.
Taste the mixture and adjust sweetness if needed by adding more honey or syrup.
Pour the blueberry lemonade mixture into popsicle molds until filled, leaving a little space at the top for expansion.
If using, drop a few whole blueberries into each popsicle mold for added texture and visual appeal.
Insert popsicle sticks into the molds and place them in the freezer for at least 4-6 hours or until completely frozen.
To release the popsicles, run warm water over the outside of the molds for a few seconds, then gently pull the popsicles out.
Notes
Serve on a colorful plate garnished with fresh blueberries or lemon slices.
